Einkorn Wheat Berries

One of the earliest cultivated wheat varieties, Einkorn is known as “man’s first wheat”. In addition to its delightful, almost buttery flavor, Einkorn is one of the most nutrient-dense wheat varieties grown today and contains high antioxidant and protein levels. The gluten proteins in Einkorn are different than modern wheat, and their simpler structure may allow some gluten-sensitive individuals to tolerate it. And because of that different, weaker gluten structure, Einkorn will require some extra work if you want to bake bread with a good rise. However, it easily makes delicious pancakes, waffles, muffins, quick breads, and other baked goods, which is our favorite way to use Einkorn.
