Red Fife Wheat Berries

Red Fife is an heirloom hard red spring wheat variety with an interesting history. It was a variety originally grown in Ukraine, but made its way to a Scottish farmer who brought it with him in the brim of his hat to Canada in the mid-1800s, where it was propagated and became known as Canada’s first wheat variety. It has always been renowned for its milling and baking qualities, but nowadays it is prized by bakers for the interesting flavors it brings to the table. Red Fife offers a blend of deep, nutty, and slightly sweet flavors that are almost as complex as its history. Owing to its old-world origins, Red Fife has a lower gluten-forming ability than its modern hard red wheat counterparts, which makes it better suited as an all-purpose flour than as a stand-alone bread flour.
