Though soft red winter wheat is generally used for cookies, cakes, and pastries, this soft red winter wheat also works well in breads when blended with other higher protein flours. We’ve personally been using this wheat in place of a hard red wheat in both yeasted and sourdough loaves and have enjoyed the results!
