A hard red winter wheat, Turkey Red was brought to Kansas in 1873 by Mennonite immigrants from Ukraine and has made it on the Slow Food Foundation’s “Ark of Taste” list, signaling its cultural and culinary value as a heritage wheat variety. It is prized for its complex flavors and adds a unique richness to breads when blended with bread flours. As an heirloom wheat, it is also known to have improved digestibility and its higher protein makes it a suitable substitute for all-purpose flour.
